(Tongue in Cheek) Actually there are plenty of regiments who still use a Union Flag as the basis for one of their colours... in the UK.

Seriously...

There are still a number of Canadian battalions whose current stand of colours have a Queen's Colour based upon the Union Flag. The Cameron Highlanders of Ottawa, Princess of Wales' Own Regiment and the Lincoln and Welland Regiment to name a few. (The Princess of Wales' Own actually have a new pattern stand of colours waiting to be presented).

Incidentally, the Queen's Colour (for line infantry battalions) in commonwealth countries is traditionally based upon the national flag or the Union Flag. The Regimental Colour is based upon the colours of the regiment, regimental ciphers and coats of arms, coats of arms or ciphers of their past or present Colonel's in Chief, and of course, the regiment's battle honours. In Guards battalions, the Regimental and Queen's Colours are reversed, the Regimental Colour being based upon the national flag and the Queen's Colour being crimson. Distinct also to Guards battalions, battle honours are displayed on both colours.
